I love quick breads. Pumpkin. Zuchini. Ginger Peach Streusel. Morning Glory. They’re all delightful to eat anytime of day with juice or coffee or tea. If I could write a quick poem about quick breads I would…but at the moment, my mind isn’t moving so quickly.

banana bread
Ingredients
2 ripe bananas, mashed
1/2 cup butter, melted
3/4 cup sugar
1 tsp baking soda
1 tsp nutmeg
1 tsp all spice
1/2 tsp cinnamon
1 egg, lightly beaten
1 1/2 cup flour
1/4 cup walnuts
1/4 cup pecans
1/2 cup chocolate chips (optional)
Directions
Preheat oven to 350. Grease and line with parchment paper a loaf pan
1. Mash bananas then add butter and combine. The mixture will be lumpy
2. Add sugar, baking soda, vanilla, nutmeg, all spice, cinnamon and egg
3. Add flour. Add walnuts and chocolate chips (if using)
4. Pour batter into loaf pan, sprinkle with pecans.
5. Bake 45 mins – 1 hour
Voila!
Post-baking thoughts: I really liked having both walnuts and pecans in the banana bread. The flavors complimented each other and the bread – try it! And if you prefer to make banana nut muffins, use a muffin tin instead!
