After I finished making the pumpkin pie, I had about cup or more of the pumpkin filling left. Feel creative, I put together the following:

Ingredients
Pumpkin pie filling (see pumpkin pie recipe)

Smooth Pumpkin Pie

1 cup heavy cream
1 cup 2% milk
3 large eggs plus 2 large egg yolks
1 tsp. vanilla extract
1 can pumpkin puree

Bare Chocolate Pecan Cups

So after I finished up all the remaining pumpkin pie filling to make the mini chocolate pumpkin pies, I still had about 6 cups of just graham cracker crust and mini chocolate chips. So I added pecans! This is the epitome of “one thing just led to another…”
